I love sharing healthy recipes that are as simple as this one…I am all about simple & easy! All you do is throw the chicken & salsa into the crock pot & 4 1/2 hours later it’s ready to be shredded, the secret to good flavor is using the home made salsa . I normally make this during my “Sunday Meal Prep” & use it throughout the week for salads, wraps, tacos, quesadillos, or even a lettuce wrap. I store mine in a Ziploc bag & it always stays fresh all week. Let me know how you like it.
- 3 large boneless, skinless chicken breasts
- 2 cups home made salsa Click here for recipe
- Place chicken breasts in your crock pot and cover completely with salsa. Set crock pot on the low setting and cook for 4½ hours.
- Place chicken in a bowl and strain out just the salsa, not the juice. Shred chicken using two forks and mix in strained salsa. Enjoy!
