My daughter brought me lunch this week…a dairy & gluten free chicken sandwich that had coleslaw on it. All I can say is that it was to die for. The next day I kept thinking about that sandwich & how good it was, so I went to work on making my own version of it & I have to say I nailed it! It was so good that I wanted to share the recipe, I hope you enjoy it as much as I did.

- ½ cup raw cashews
- ¼ cup water
- ¼ cup diced red onion
- 3 tablespoons raw apple cider vinegar
- 1 to 2 tablespoons honey
- ½ teaspoon sea salt
- Combine all of the ingredients in a blender, starting with just 1 tablespoon of honey, and blend until completely smooth and creamy. Taste the dressing and add another tablespoon of honey to the mix, if desired, for a sweeter tasting coleslaw.
- Makes 1 Cup dressing
