Crockpot Salsa Chicken

recipe - crockpot salsa chicken in pot

I love sharing healthy recipes that are as simple as this one…I am all about simple & easy!  All you do is throw the chicken & salsa into the crock pot & 4 1/2 hours later it’s ready to be shredded, the secret to good flavor is using the home made salsa .  I normally make this during my “Sunday Meal Prep” & use it throughout the week for salads, wraps, tacos, quesadillos, or even a lettuce wrap.  I store mine in a Ziploc bag & it always stays fresh all week.  Let me know how you like it.

You can always use salsa from a jar, but my recipe for Home made salsa is so easy & so yummy that you really do need to try it! http://pattylkinsella.com/homemade-salsa/
Ingredients
Instructions
  1. Place chicken breasts in your crock pot and cover completely with salsa. Set crock pot on the low setting and cook for 4½ hours.
  2. Place chicken in a bowl and strain out just the salsa, not the juice. Shred chicken using two forks and mix in strained salsa. Enjoy!
